Each wine is born from a choice: that of forcing nothing. No over-maturation, no excessive extraction, no over-oaking. A beautiful harvest, well-selected and ripe, from a gravelly terroir cultivated organically, already provides everything needed to create a great bottle. The rest is a matter of sensitivity, precision, and time.
But, let's be honest, nature has already done almost everything!
Château Mille Roses Margaux
AOC Margaux - Organic Red Wine
What a destiny for these two plots. Originally classified as Haut-Médoc, they were promoted to AOC Margaux starting with the 2007 vintage, during a classification review that recognized the exceptional quality of their terroir. They are located on the Bel-Air-Monbrison plateau and against the gravelly ridges of Château Giscours. Their soils consist of large gravel and black sands over a deep layer of yellow clay. They are perfectly suited for great viticulture. Château Mille Roses Margaux is blended with 60% Cabernet Sauvignon and 40% Merlot. Aging lasts twelve months, with one-third new oak to soften the beautiful tannic structure provided by the high proportion of Cabernet. The result: a wine with beautiful acidity, ripe black fruits, often floral, sometimes spicy. Elegant, profound, made for aging.

The Terroir
Grapes from two plots with a unique destiny. Originally classified as AOC Haut-Médoc, they were promoted to AOC Margaux starting with the 2007 vintage, during a classification review that officially recognized the exceptional quality of their terroir. They are located on the Bel-Air-Monbrison plateau, in the southern fringe of the Margaux vineyard, near the vines of Château Giscours, Château Monbrison, and Château d'Angludet.
The soils are very gravelly, resting on deep yellow clay, typical of the appellation's best terroirs. This clay subsoil retains water deep down and nourishes the vine over time, while the surface gravel ensures drainage and warmth. An exceptional terroir, designed to produce wines with great aging potential.
Grape Varieties and Blending
Cabernet Sauvignon: 55 to 75% depending on the vintage - provides structure, tight tannins, aging potential
Merlot: 25 to 45% depending on the vintage - provides fruit, roundness, floral notes

Maceration duration: 20 to 35 days depending on the vintage and phenolic maturity
Malolactic fermentation: in barrels
Aging: 12 months in French oak barrels, 30 to 40% new oak
Coopers: 5 different coopers, 80% French oak (Allier, Vosges)
The higher proportion of new oak compared to the Haut-Médoc is a deliberate choice: it helps to round out and soften the tight tannic structure provided by the high proportion of Cabernet Sauvignon, without ever dominating the fruit.
Tasting Profile
Château Mille Roses Margaux requires some aeration to fully open up. The nose is rich: ripe black fruits, floral notes, praline, spicy touches depending on the vintage. The palate is both luscious and very refined, combining underlying power with the characteristic elegance of the Margaux appellation. Beautiful acidity, integrated oak, assertive length. A wine with great aging potential.
Food and Wine Pairings
Roasted Pauillac lamb, duck with cherries, feathered game, aged cheeses such as Saint-Nectaire or Ossau-Iraty. Also ideal with a beef Wellington or a dry-aged rib of beef.
Serving temperature: 17 to 18 °C
Decanting: highly recommended, minimum 1 hour for young vintages
Aging potential: 10 to 15 years depending on the vintage

AOC Haut-Médoc - Organic Red Wine
The four Haut-Médoc plots surround the château, in the commune of Macau-en-Médoc, between Château Cantemerle and Château Giscours. This is where Mille Roses wine is born in its most classic form: a blend of Merlot and Cabernet Sauvignon, complemented by a hint of Petit Verdot.
The style is luscious, with a beautiful balance between fruit and freshness, a dense but silky tannic structure. Aging in barrels uses 25% new oak: just enough to round out the wine without ever masking its natural richness.

The Terroir
Four plots surround the château, in the commune of Macau-en-Médoc, between Château Cantemerle and Château Giscours. The soils are Garonne gravels: deposits of rolled pebbles and sands resulting from the retreat of Quaternary glaciers. Here, they are mainly small gravels and very deep sand without clay subsoils. Draining, filtering, both warm during the day and radiating heat at night, they give the wines their natural freshness, aromatic precision, and elegant structure.

Cabernet Sauvignon: 50% - provides tannic structure, freshness, and aging potential
Merlot: 35% - provides fruit, roundness, and lusciousness
Petit Verdot: 15% - house selection, provides color, acidity, and complexity

Grilled red meats, roasted lamb, game, aged pressed cheeses. Ideal with poultry, Bordeaux-style ribeye steak, or duck breast with porcini mushrooms, but also suitable for stews that are not too spicy.

L'Enfant
AOC Haut-Médoc - Organic Red Wine
The name was already there even before the arrival of the first child, but it became clear when Sophie and David learned they would have an additional harvester in the family. The L'Enfant cuvée naturally preceded the birth of Jean, the first in the family's history.
On the Haut-Médoc terroir, L'Enfant is a blend primarily focused on Merlot, designed for aromatic intensity and fruit. The tannic power is lighter than the grand vin, but the wine is no less serious: it is aged twelve months in one- to two-year-old barrels, without new oak, to preserve the fruit without drying it out. Luscious, festive, immediate, it is best enjoyed young and easily shared.

The Story of the Cuvée
The name was in Sophie and David's minds before the arrival of their first child. When they learned that a new harvester would join the family, the L'Enfant cuvée naturally preceded the birth of Jean, the first in the château's family history. A cuvée born from a surge of life, true to the spirit of the estate: spontaneous, sincere, without artifice.
The Terroir
From the Haut-Médoc plots surrounding the château, on the Garonne gravels of Macau-en-Médoc. The same terroir as the grand vin, the same high standards in the vineyard, with a plot selection focused on fruitier batches and lighter tannic structures.
Grape Varieties and Blending
L'Enfant is usually blended with a dominance of Merlot, for its generous fruit and softer tannic structure. The exact proportion varies according to the vintage: this is one of the cuvées where David allows the most freedom each year.

The absence of new oak is a fundamental choice for this cuvée: it is about preserving the fruit, not drying out the lighter tannic structure, and allowing the wine to express itself freely without the oak taking over.
Tasting Profile
L'Enfant is the most immediate wine in the range. Aromas of red and black fruits, strawberry, cherry, prune depending on the vintage. Luscious, supple palate, driven by fruit. Light tannic structure, natural freshness, pleasant finish. A festive wine, easy to share, to drink within its first ten years.
Food and Wine Pairings
Roasted poultry, fine charcuterie, wood-fired pizzas, spaghetti bolognese, mild cheeses. Perfect for a meal with friends or a generous aperitif dinner.

Decanting: optional, 20 to 30 minutes are sufficient

Our philosophy: terroir above all
In contrast to technological wine, Château Mille Roses produces wines of terroir and balance. What matters is the choice of plots, the quality of work in the vineyard, and winemaking and aging that do not betray the natural potential of the grape.
The three cuvées share this same conviction, each with its own winemaking, its blending nuances according to the vintage, and its aging adapted to its tannic structure. The same concern to reduce sulfur doses, already on average up to twice lower than organic standards. The same refusal of any systematic approach.

Un vignoble conduit en agriculture biologique
Depuis 2010, l'ensemble du vignoble est conduit en agriculture biologique. Certifié AB par Ecocert depuis 2013, le domaine a supprimé tout herbicide et pesticide de synthèse. Le travail du sol, l'effeuillage manuel, la maîtrise de la surface foliaire et la vendange avec la technique Optigrain, un tri embarqué, voir selon la nécessité une vendange manuelle sont autant de gestes et de techniques qui respectent la vie du sol et l'intégrité du fruit.
